Pearce Traditional English Scones

Pearce Traditional English Scones are the perfect tea-time treat. Our family recipe is quick and easy to prepare and uses ingredients that are in most English kitchen cupboards.

SCONE INGREDIENTS
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 cup cold butter cut into small bits
1/2 cup milk
1 egg
Optional: Additional milk & sugar
Optional: 1/4 cup sultanas

SCONE DIRECTIONS
Preheat the oven to 200C/400F

  • Sift flour, sugar, and baking powder into a mixing bowl.
  • Cut in butter until mixture resembles fine crumbs.
  • OPTIONAL: If you wish you can now add ingredients such as 1/4 cup fruit, or 2 TBLS herbs, or 1/2 cup cheese etc.
  • Beat eggs with milk; add to dry ingredients, to form a slightly sticky dough.
  • Turn dough onto a lightly floured board; roll to 1.5 inch thickness.
  • Cut with a 2-1/2-inch biscuit cutter or a small tea cup for large scones.
  • Place scones on heavy baking sheet; close together but not touching. Optional: Brush tops with milk and sprinkle with sugar.
  • Bake at 400° for 10-15 minutes or until golden brown.

PEARCE TRADITIONAL SCONE TOPPINGS
Slice warm scones and top with Clotted Cream and Homemade Blackberry or Raspberry Jam. Pearce Traditional English Scones are always served with Earl Grey tea infused with milk and sugar.

Fruit Scones
Add 1/4 cup sultanas, dried mixed fruit or chopped dates to the dry ingredients.
Cheese Scones
Add 1/2 cup grated cheese to the dry ingredients. Sprinkle the scones with more grated cheese before baking.
Herb Scones
Add 2 teaspoon fresh or 1 teaspoon dried, chopped herbs to the dry ingredients. Herb such as culinary lavender, or rosemary, or, thyme, or basil, etc.

SCONE TIPS
Keep equipment as cold as possible.
Work quickly, so the dough does not get too warm or over worked.
If you do not have a plain cutter use your finger tips to incorporate the butter bits.
